INGREDIENTS
1 cup black beans
4 cups water
2 or 3 sprigs each of fresh thyme and large leaf sage, 2 bay leaves
3 cloves of peeled garlic, smashed
1 large sweet onion, coarsely diced
1 pound ground beef. Five Dot Ranch. $7.99 lb.
1 can whole peeled tomatoes

INSTRUCTIONS
Pour cold water in medium sized 4 quart all-clad pot. Bring beans and water to a boil and reduce to rolling simmer and continue to cook for 75-90 minutes, may leave uncovered for part of the cooking time.
In a heated pan add canola oil. Sautee onion until translucent but not brown.
Add beef and sautee until brown. Drain fat from beef.
Add the beef to the beans.
Add the tomatoes and bring to a boil. Simmer for least an hour. Serve over rice.
